D5 is the smallest unit of the Diploma and the one most often left until the last three weeks. That is a mistake, because it is also the most self-contained: learn when the spirit goes in and what happens to the wine afterwards, and most of the unit follows.

Start with timing of fortification, because it explains sweetness across the whole unit. Spirit added partway through fermentation leaves residual sugar, as in Port. Spirit added after a complete fermentation leaves a dry wine, as in most Sherry. Almost every style difference in D5 hangs off that one axis.
Yes. Like D4, the unit combines a theory paper with a tasting paper, so you need calibrated experience of biological versus oxidative aging, and of the sweetness and acid structures that separate Sercial from Malmsey or Fino from Oloroso.
