D4 is the numbers unit. Dosage in grams per litre, lees ageing in months, pressure in atmospheres, permitted juice yield at the press: these are the facts that feel familiar without being known, and the ones an examiner can mark objectively. Every table below pairs a rule with the sensory consequence it produces, because naming the method earns little and explaining what it does to the wine earns the marks. The Five Ways to Put Bubbles in Wine

Asti is the variant worth separating out. It has no second fermentation at all: a single fermentation of Moscato must is run in a pressure tank and arrested by chilling and filtration while sugar and carbon dioxide both remain, which is why the wine is grapey, sweet, and low in alcohol.
Pressure and the Legal Categories

Pressure comes from sugar. Roughly four grams per litre of sugar in the tirage liqueur yields about one atmosphere, so around 24 g/L is the standard addition for a fully sparkling traditional method wine. Higher pressure is not better: it makes the wine more aggressive on the palate, which is precisely why some styles are deliberately bottled softer.
The Base Wine
Everything about the base wine is chosen against a single problem, which is that the second fermentation adds roughly one and a half per cent alcohol and strips the wine of what little richness it had.
- High acidity and low potential alcohol. Fruit is picked early, at levels that would make a poor still wine. This is why marginal, cool climates dominate the category, and why a warm region making sparkling wine usually reaches for altitude, a coastal site, or a very early pick.
- Neutral, low phenolic juice. Whole bunch pressing at low pressure, careful fraction separation, and gentle handling. Phenolics coarsen the mousse and go bitter with age.
- Clean fruit. Botrytis brings laccase, which oxidises the base wine and destroys the mousse, so rot is a bigger enemy here than in still wine.
- A malolactic decision. Blocking it retains malic acid and gives a leaner, more linear wine that ages long; allowing it softens acidity, adds a creamier note, and gives microbial stability in bottle.
- Reserve wines. The tool that makes a consistent non-vintage house style possible, held in tank, in oak, or in a perpetual reserve topped up each year.
- Blending. Across varieties, villages, press fractions and vintages, and it is done at the base wine stage, before the second fermentation locks the decision in.
The Traditional Method, Step by Step

Autolysis: What the Lees Actually Do
Yeast cells die once the sugar is gone and their own enzymes then break down their cell walls, releasing mannoproteins, polysaccharides, amino acids and lipids into the wine. Three consequences matter. The aromatic one is the bread, biscuit, pastry and toast character, which takes a long time to appear meaningfully and only really builds beyond the first year or two on lees. The textural one is mannoproteins binding carbon dioxide and softening the perception of acidity, which is why a long-aged wine feels creamier at the same measured acidity. The protective one is that lees consume oxygen and scavenge free radicals, so a wine on its lees ages far more slowly than the same wine after disgorgement.
That last point is the reason a late-disgorged bottle tastes younger than an early-disgorged bottle of the same cuvee, and the reason a disgorgement date on the back label is genuinely useful information rather than decoration.
Dosage and the Sweetness Bands

Two traps. First, the bands overlap by design, so a wine at 5 g/L can legally be labelled either Extra Brut or Brut. Second, sweetness is perceived against acidity, so a high acid Champagne at 8 g/L reads bone dry while a low acid warm climate sparkling at the same number reads soft. That relationship, not the number alone, is what a tasting answer needs to say.

Champagne sits at the northern edge of viable viticulture. The climate is cool and broadly continental with an oceanic influence, which delivers three recurring problems: spring frost, cold and wet flowering that causes poor fruit set, and autumn rain that brings rot. The chalk beneath the region is the compensating advantage, because it drains freely, holds water within its pores for dry spells, and reflects light and warmth back into the canopy. Blending across a large area and across vintages is the direct commercial answer to that vintage variation, not merely a stylistic preference.
Champagne: The Rules

Champagne: Styles and Who Made the Bottle

The two-letter code on the label tells you who actually made the wine, and it is a reliable exam question. NM is a negociant manipulant, buying fruit or wine and selling under its own name. RM is a recoltant manipulant, a grower making wine from its own fruit. CM is a co-operative. RC is a grower selling wine made at its co-operative under its own label. SR is a growers’ company. ND is a distributor selling wine it did not make. MA is a buyer’s own brand, where the name on the label belongs to a retailer or restaurant rather than to a producer.
Cremant and the Rest of France

The Cremant rules are national and worth knowing as a block: hand harvesting into whole bunches, a limit on juice extraction at the press, a minimum of nine months on the lees, and a minimum of twelve months from tirage to release. Those requirements are what separate Cremant from generic French sparkling wine, and they are why the category punches above its price.
Cava

Cava is a traditional method wine defined by production zones rather than by one contiguous region, with the great majority made in Penedes in Catalonia and further zones in the Ebro valley, the Levante and Extremadura. The classic varieties are Macabeo for fruit and body, Xarel-lo for structure and its distinctive earthy note, and Parellada for acidity and floral lift; Chardonnay and Pinot Noir are permitted, and rose leans on Trepat, Garnacha and Monastrell. The Mediterranean climate is the honest problem: warmth means the base wine needs early picking and altitude to hold acidity, which is exactly what the top tiers are designed to enforce. The regulatory direction of travel for the Guarda Superior tiers is towards certified organic fruit, alongside the existing traceability and yield restrictions.
Prosecco and the Italian Tank Method

Prosecco is a tank method category by design, not by economy: Glera is aromatic in a delicate, primary way, and autolysis would bury it. The sweetness bands matter more here than almost anywhere, because Extra Dry is the traditional Prosecco style and reads distinctly off dry, while the Brut share of the category has grown steadily to meet export demand.

Franciacorta’s argument against Champagne is warmth: the fruit ripens more reliably, so the wines are broader and the top bottlings lean on long lees ageing rather than on high acidity for tension. Erbamat, a late ripening local white with high natural acidity, was admitted specifically as a climate change hedge.
Germany, Austria and Central Europe

Riesling based Sekt is the style worth being able to describe, because it inverts the usual template: high acidity and pronounced primary varietal aroma with restrained autolytic character, rather than a neutral base transformed by lees.
