The short answer
The Level 3 theory exam adds a short written answer paper to the multiple choice, and the written paper is what decides most results. It asks you to explain, in a few sentences at a time, why something happens: what a technique does, what a soil contributes, why two wines differ in style. Examiners award marks per relevant point against a marking scheme, so naming a term without explaining its effect earns almost nothing. The candidates who pass write short cause-and-effect chains, one markable point per sentence, and stop when the marks are covered.

Multiple choice rewards recognition: the right answer is on the page, and eliminating three wrong ones is often enough. The written paper removes the scaffolding. Nothing is on the page except the question, and the marks sit in the explanation you build, not the term you remember. “Chalk” earns nothing in a question about Champagne; “chalk drains freely yet retains water in its porous structure, supporting the vines in dry spells” earns twice, because it states a property and attaches its consequence.

That is the single adjustment that matters: every fact you write should tow its effect behind it. Cause-and-effect chains earn marks, naming alone does not. The questions below are drawn from Sommo’s audited Level 3 bank, each with a model answer and the marking points it is built from. Cover the answer, write your own, then count the points you actually landed rather than admiring the prose you wrote.

How to structure an answer

Take a typical four-point question: what is the significance of diurnal temperature variation?

A model answer runs: “Warm daytime temperatures promote photosynthesis and sugar accumulation, while cool nights slow the respiration of malic acid. This balance lets the grapes reach full ripeness while retaining the acidity needed for fresh, balanced wines.”

Two sentences, four marks. Break it apart and the structure shows:

  1. Warm days promote photosynthesis and sugar accumulation. One mechanism, one consequence, one mark.
  2. Cool nights slow the respiration of malic acid. The second mechanism, and note it names the specific acid rather than saying “keeps acidity”. One mark.
  3. The grapes reach full ripeness while retaining acidity. The combined effect of the two mechanisms. One mark.
  4. The result is fresh, balanced wine. The style consequence, closing the chain at the glass. One mark.

Nothing in the answer is decoration. Every sentence is a link in the chain from vineyard condition to finished wine, which is precisely what the marking scheme is a list of.

What is the effect of canopy management on grape quality?

Model answer. Canopy management techniques such as leaf removal and shoot positioning regulate the microclimate around the vine. By controlling sunlight exposure to the fruit and improving air circulation through the canopy, they promote even ripening and reduce the risk of fungal disease, both of which directly improve fruit quality.

What is the primary risk of excessive irrigation in viticulture?

Model answer. Excessive irrigation drives overly vigorous vegetative growth, producing a dense, shaded canopy. The shading dilutes fruit flavours and delays ripening, and the poor airflow inside the canopy raises the risk of fungal disease.

Why this scores: excessive vegetative vigour, shaded canopy, diluted fruit flavours, delayed ripening, increased disease pressure. Note the shape: one cause, then its consequences in order.

What is bâtonnage?

Model answer. Bâtonnage is the stirring of the fine lees, the dead yeast cells left after fermentation, while the wine rests in barrel. It builds body and texture, adds complexity, and helps integrate oak flavours.

Why this scores: stirring the fine lees, defined as dead yeast cells, during barrel maturation, increased body and texture, added complexity. Defining the term you were given is itself a markable point.

What is cold soak used for in red winemaking?

Model answer. Cold soak chills crushed grapes before fermentation begins, extracting colour and fruit flavours from the skins. Because the harsh tannin extraction associated with alcohol has not yet started, the wine gains pigment and aromatic complexity without coarse tannin.

Why this scores: pre-fermentation maceration, colour extraction, fruit flavour extraction, avoidance of harsh tannins. The second sentence is the mark most candidates miss: why the timing matters.

What is the purpose of press wine in red winemaking?

Model answer. Press wine is extracted from the grape skins after the free-run juice has been drained. Blending a portion back into the free-run wine raises the levels of tannin and colour and adds structure.

Why this scores: extracted from the skins, after the free run is drained, blended back in, more tannin, more colour, added structure.

What is the effect of new oak on Pinot Noir versus Cabernet Sauvignon?

Model answer. Pinot Noir is a delicate variety, lighter in body with subtle aromatics that heavy new oak easily overwhelms. Cabernet Sauvignon carries higher tannin and greater flavour concentration, so it integrates and balances the influence of new oak far more comfortably.

Why this scores: Pinot Noir’s delicacy, the risk of oak dominance, Cabernet Sauvignon’s tannic structure, its flavour concentration, successful oak integration. Comparison questions want both halves argued, not one described.

What factor most influences the character difference between Left Bank and Right Bank Bordeaux?

Model answer. Soil composition drives the difference. The Left Bank’s gravel soils favour Cabernet Sauvignon, while the Right Bank’s clay and limestone suit Merlot, and that relationship between soil and dominant variety dictates the stylistic profile of each bank.

Why this scores: Left Bank gravel, Right Bank clay and limestone, Cabernet Sauvignon dominance, Merlot dominance, the soil-to-grape relationship named explicitly as the mechanism.

What is the significance of Kimmeridgian limestone in Chablis?

Model answer. Kimmeridgian limestone is an ancient marine soil containing fossilised oyster shells, and it is widely credited with the signature mineral, flinty, steely character of Chablis. The soil is a defining feature of the region’s terroir and distinguishes its wines from those grown on other soils.

Why this scores: ancient marine limestone, fossilised oyster shells, mineral character, flinty or steely notes, the terroir link. Concrete detail, the oyster shells, is what separates this from a vague answer about “minerality”.

What distinguishes Amarone della Valpolicella from standard Valpolicella?

Model answer. Amarone is made by the appassimento method: the grapes are dried on racks before fermentation, which concentrates their sugars and flavours. The result is a wine significantly richer, fuller bodied, and higher in alcohol than standard Valpolicella.

Why this scores: appassimento named, drying on racks described, concentrated sugars and flavours, higher alcohol, fuller body. Name the technique, explain the technique, state the outcome.

What is the purpose of riddling in traditional method sparkling wine?

Model answer. Riddling gradually rotates and tilts each bottle from horizontal to fully inverted. The movement works the spent yeast sediment down into the neck of the bottle, where it can be removed cleanly at disgorgement.

Why this scores: gradual rotation and tilting, horizontal to inverted, sediment collected in the neck, preparation for disgorgement. Process questions are marked in sequence, so answer in sequence.

What is the significance of Champagne’s chalk subsoil?

Model answer. The chalk drains freely yet holds water in its porous structure, supporting the vines through dry periods. Its white surface reflects sunlight into the canopy to aid ripening, and it keeps the cellars carved into it cool and stable for ageing.

Why this scores: excellent drainage, water retention, porous structure, reflected sunlight aiding ripening, cool stable cellars. One soil, five separate consequences, each worth a mark.

What is the significance of flor in Sherry production?

Model answer. Flor is a film of yeast that grows on the surface of certain Sherries during maturation. It shields the wine from oxidation and contributes distinctive pungent aromas and flavours such as almond and dough.

Why this scores: film of yeast, on the wine’s surface, protection from oxidation, distinctive flavours with examples. The almond and dough examples convert a generic claim into evidence.

What is the key difference between LBV Port and Vintage Port?

Model answer. Late Bottled Vintage Port spends four to six years in barrel and is usually filtered before bottling, so it is ready to drink on release. Vintage Port is bottled after only two years, unfiltered, and needs significant bottle age to reach its full complexity.

Why this scores: LBV’s four to six years in barrel, LBV filtered, ready on release, Vintage Port bottled after two years, unfiltered, long bottle ageing required. Numbers are marks: “aged longer in barrel” is weaker than “four to six years”.

What criteria does the WSET SAT use to determine quality?

Model answer. The SAT judges quality on four criteria: the balance of the wine’s structural components, the intensity of its flavour concentration, the complexity of its flavour profile, and the length of its finish. Taken together, these determine the quality level awarded.

Why this scores: balance, intensity, complexity, length, and the conclusion that the four operate together. This framework also anchors the tasting paper, so it has to be automatic.

Common questions

How is the WSET Level 3 written paper marked?

Examiners award marks per relevant point against a marking scheme. A question carrying five marks wants five distinct, correct points, and a beautifully written answer containing two points earns two marks. Repeating the same point in different words earns it once, and a wrong fact earns nothing but costs you the time it took to write.

How long should my written answers be?

As long as the marks demand and no longer. A useful rule is one clear point per mark available, so a four-mark part wants roughly four sentences of substance. Padding, scene-setting, and restating the question earn nothing, and the minutes they consume are the scarcest resource in the exam.

Are bullet points acceptable in the written answers?

Yes, provided each bullet carries a markable point. Examiners mark content, not prose style, so a bullet that states a cause and its effect earns the same as the sentence version. What fails is a bare list of terms with no explanation attached, because naming without explaining is not a point.

How should I revise for the written paper?

Write, from memory, against a list of marking points, exactly as this page is structured. Take a topic, answer the question on paper, then check which points you hit and which you missed. Multiple choice drilling still helps, because recall feeds writing, but only writing practice exposes the explanations you cannot yet build.
