The SAT is WSET's structured method for assessing a wine: appearance, nose, palate, and conclusions, each with a fixed vocabulary and a fixed order. Its purpose is consistency. Two tasters using it properly on the same wine should produce recognizably similar notes, which is what makes it markable.
