Level 2 keeps winemaking at the level of cause and effect rather than chemistry. You need to know what a warm climate does to sugar, acid, and flavor, what happens in fermentation, what oak contributes, how red wines get their color and tannin, and how the traditional and tank methods differ for sparkling wine.

Do I need to know fermentation temperatures?

You need the principle rather than exact numbers: cooler fermentation preserves delicate fruit and floral aromas in whites, warmer fermentation is used for reds because it helps extract color and tannin. Questions are written around that logic, not around a thermometer reading.
