Common questions
The basic interactions, kept deliberately simple: salty and acidic foods flatter a wine, sweet foods make a dry wine taste thin and sharp, and a dish should be matched to a wine of similar intensity. Level 1 does not expect the detailed component-by-component analysis that arrives at Level 2, just the handful of rules that stop a pairing going wrong.
How to store bottles so they do not spoil: cool, dark, and away from temperature swings. How to serve each style at a sensible temperature, with sparkling wines well chilled, whites and rosés chilled, and reds around cool room temperature. Plus the right glassware and how to open a bottle of still and sparkling wine safely.
