Three pairing rules worth remembering.
Match weight.
A light dish wants a light wine. A rich, fatty dish wants something with structure to cut through it.
Bistecca alla Fiorentina + Brunello, not Pinot Grigio.
Match acidity.
The wine should be at least as acidic as the dish, otherwise it tastes flat. Acidity also cuts richness.
Lemon-buttered fish wants Sancerre, not Chardonnay-oak.
Match place.
When in doubt, drink what the locals drink with that dish. Sangiovese with red sauce. Riesling with schnitzel.
It's a heuristic, not a law. But it works far more often than it doesn't.
Describe the meal. Get the bottle.
Sommo reads every bottle in your cellar, checks how each one tastes right now, and tells you which to open for tonight's dinner.
