Body

Light, medium, or full. A wine's weight on the palate sets the rules for everything else, especially what it can pair with.

Acidity

High-acid wines feel fresh and food-friendly. Low-acid wines feel rounder, but flatten against rich food.

Tannin

The grip on your gums. High tannin wines pair with fatty meats and tolerate years in the cellar. Low tannin reds drink young.
