Certified is where sommelier study stops being about wine and starts being about law. Introductory asked which grape makes red Burgundy. Certified asks which communes hold grand cru vineyards, how long a Barbaresco has to age before release, and which white grape may legally be co-fermented into a Côte-Rôtie.
It is also the first tier with three separate hurdles: theory, blind tasting, and service. All three have to be passed, and most candidates who fail fail on one of them, not on all three. The tasting and service halves are rehearsal problems, so the sooner you start working the grid out loud on a timer, the better.
