Saperavi is a red grape variety, with its roots in Kakheti, Georgia.
The wines show medium-full body, medium-high tannin, high acidity, dry and medium alcohol.
The tasting note runs to dark fruit, cherry, plum, blackberry, earth and spice.
It is planted most seriously in Kakheti, Finger Lakes AVA and Victoria.
In the vineyard it is marked by late ripening, hardy vigour and a preference for cooler climates.
On other labels it goes by Sapeur, Sapperavy and Krasilshik.
At the table it suits gozitan ravjul, deep-dish pizza and smoky barbecued pork chops.
