The wines show medium-full body, medium-low tannin, medium acidity, dry and medium alcohol.
The tasting note runs to earth, dark fruit, pepper, spice and earthy.
It is planted most seriously in Gaillac.
In the vineyard it is marked by mid ripening, medium vigour and a preference for moderate.
It blends readily with Syrah and Fer Servadou.

At the table it suits wood-fired leg of lamb, milk-fed veal with baba ghanoush and ham-hock stew with cabbage.
